Need a new recipe for those over ripe bananas? I did some experimenting with a carrot cake recipe and came up with this banana cake. It will be my new go to for my over ripe bananas and cream cheese frosting is always a good idea! But it would also be good with a chocolate frosting or maybe a peanut butter frosting?!?

Banana Cake
Ingredients
- 1 ¼ cup flour
- 1 teaspoon baking soda
- ½ tsp salt
- 1 cup sugar
- ½ cup oil
- 1 teaspoon vanilla
- 1 egg
- 1 cup mashed banana
- ½ cup sour cream
Instructions
- Preheat oven to 350
- Spray and 9X9 square inch pan
- Combine sugar, oil, vanilla, eggs, banana and sour cream. Stir well.
- Add flour, baking soda and salt. Mix in well.
- Pour batter into the greased pan.
- Bake at 350 for 40 – 50 minutes or until cake springs back when lightly touched in the center.
- Cool completely. Then frost with a cream cheese, chocolate or peanut butter frosting.

Coconut Cream Cheese Frosting
Ingredients
- ½ cup cream cheese, softened
- 1 ¼ cup icing sugar
- 3 tablespoon butter
- 1 teaspoon vanilla
- ½ cup coconut
- ¼ cup chopped nuts
Instructions
- Combine cream cheese, icing sugar, butter and vanilla; beat until smooth
- Stir in coconut and nuts
- Spread over cooled cake or cupcakes
