These are not your typical meringue cookies. They have a beautiful shiny coating and a chewy inside. Plus you can change up the recipe by adjusting the cocoa. Just add flavored instant coffee or espresso powder to the cocoa. Add black cocoa powder for an even richer chocolate experience because everything in moderation, except chocolate…always up the chocolate content!

Chewy Chocolate Walnut Meringues
Ingredients
- 1 ½ cup icing sugar
- ¼ cup cocoa
- ½ tablespoon cornstarch
- pinch of salt
- 2 large egg whites
- ¼ teaspoon vanilla
- 1 cup walnuts
Instructions
- Preheat oven to 350
- Line baking sheet with parchment paper
- Beat icing sugar, cocoa, cornstarch and salt on low to combine
- Add egg white and beat on low until combined, then beat on high for 1 minute
- Stir in vanilla and walnuts
- Scoop tablespoon of batter on to prepared baking sheet
- Bake until shiny and firm 12-15 minutes
- Let cool on the baking sheet for 2 minutes before removing them to a cooking rack
