No eggs or milk? No problem! This is one of those wacky/crazy/depression cakes that come together in one bowl (or even in the baking pan) that uses ingredients you probably already have at home. Topped this on with chocolate icing!

Chocolate Chip Snack Cake
Ingredients
- 1 ½ cup flour
- 1 cup sugar
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon vinegar
- 5 tablespoon vegetable oil
- 1 cup water
- 2 teaspoon vanilla
- 1 cup mini chocolate chips
Instructions
- Preheat oven to 350 degrees.
- Grease a 8X8 or 9X9 square or round pan.
- Combine flour, sugar, baking soda and salt.
- Add the vinegar, vegetable oil, vanilla and water. Stir until mixture is smooth.
- Add half of the mini chocolate chips and stir.
- Pour batter into prepared pan and sprinkle remaining mini chocolate chips on top.
- Bake for 30 – 35 minutes or until a toothpick inserted into the middle of the cake comes out clean. Cake should spring back in the middle when lightly touched.
- Cool completely and frost!

Not Too Sweet Chocolate Icing
Ingredients
- ⅓ cup salted butter, softened
- 2 ¼ cup icing sugar
- 6 tablespoon cocoa
- 1 teaspoon vanilla extract
- ⅔ cup heavy cream (or half & half or milk)
Instructions
- Beat the butter until fluffy.
- Add the icing sugar and cocoa slowly and continue to beat.
- Add the vanilla extract and then slowly add the heavy cream (or milk).
- Continue to beat until you reach the consistency you desire. (You may need to add more icing sugar if too thin or more heavy cream, if too thick. (Depending on how thick you want the icing)
