Chocolate Chow Mein Noodle Clusters (Haystacks) are a sweet and salty treat. An easy, no bake recipe using just a few ingredients. Chow mein noodles are dipped in peanut butter and chocolate and then sprinkled with chopped peanuts and sea salt.
Who grew up having these cookies at Christmas? Since posting about these cookies on Instagram, many followers have shared what they call these cookies in their part of the world. I had heard everything from Haystacks to Chocolate Spiders (appropriately from Australia) to Ting-a-lings.
This no bake recipe is a quick and easy one to make. Start by microwaving the chocolate chips and crunchy peanut butter, stirring often. Once smooth add the chow mein noodles and stir until completely covered. Then simply put spoonfuls onto a baking sheet and give them a little pat to achieve the shape you desire. They can be piled up high and easily keep their shape or flattened down. Then just give them a sprinkle of chopped peanuts and sea salt. Pop them in the fridge to set and enjoy!

Chocolate Chow Mein Cookies (Haystacks)
Ingredients
- 1 cup semi sweet chocolate chips
- ½ cup crunchy peanut butter
- 2 cups dry chow mein noodles
- ½ cup chopped peanuts
- sea salt, to sprinkle
Instructions
- Line a baking sheet with parchment paper for easier clean up.
- Place the chocolate chips and peanut butter in a microwave safe bowl. Microwave on high in 20 second intervals. Stirring after every 20 seconds until smooth.
- Stir in chow mein noodles until completely covered.
- Drop by spoonfuls on to a baking sheet. Press down slightly and push in sides until you have the form you like. (I prefer thinner cookies are they are easier to eat)
- Sprinkle with chopped peanuts and sea salt (if desired).
- Refrigerate for 2 hour to set the chocolate.
- Store in fridge or other cool place.
