If you are making chocolate donuts then chocolate glaze is the only way to go. If you can do double chocolate then do it! These are a baked cake style donut and the glaze can be used on cakes and cookies too.

Chocolate Glaze Donuts
Makes 12 regular donuts or 24 mini donuts
Ingredients
For the Donuts
- ½ cup All Purpose or Cake Flour
- 2 tablespoon cocoa
- ½ teaspoon baking powder
- ⅛ teaspoon baking soda
- ⅛ teaspoon nutmeg
- ⅛ teaspoon espresso powder
- ⅛ teaspoon salt (omit if using salted butter)
- 1 tablespoon butter, melted
- ¼ cup butter milk*
- ½ teaspoon vanilla extract
- 1 egg yolk
- 2 tablespoon white sugar
- 2 tablespoon brown sugar
For the Chocolate Glaze
- ¼ cup chocolate chips
- 2 tablespoon butter
- 2 tablespoon icing sugar
Instructions
For the Donuts
- Combine the flour, cocoa powder, baking powder, baking soda, nutmeg, espresso powder and salt. Set aside.
- Combine melted butter, buttermilk*, vanilla extract, egg yolk, white sugar and brown sugar. Mix well.
- Add the wet ingredients to the dry ingredients. Mix well.
- Preheat oven to 350 degrees. Spray a donut pan with cooking spray.
- Baked mini donuts for 6-8 minutes and regular sized donuts for 8 minutes.
- Remove from oven and let cool in pan for 2 minutes. Then turn pan upside down and put donuts on a cooling rack.
- Repeat process with second batch if using just one pan.
For the Chocolate Glaze
- Combine chocolate chips and butter in a microwave safe dish. Microwave on high for 30 seconds.
- Stir until smooth and then add the icing sugar. Stir until smooth.
- Dip the donuts into the glaze and return to wire cooling rack.
Notes
- make your own buttermilk by putting 1 teaspoon of lemon juice or vinegar in a ¼ cup measuring cup and then fill up with milk
