This is a new favorite! You don’t even need to use a bowl. You can just mix it in the pan! I am feeling lots of different flavor combinations coming to the blog soon. I used 3 tablespoon dutch processed cocoa and 1 tablespoon black cocoa for this version. This time made with a Rich Chocolate Icing because chocolate with more chocolate is always a good idea 😉 Plus I think it needs to have a better name because it is just too amazing to be called snack cake.

Chocolate Snack Cake
Ingredients
- 1 ½ cup flour
- 1 cup white sugar
- 4 tablespoon cocoa powder
- ½ teaspoon salt
- 1 teaspoon baking soda
- 1 tablespoon white vinegar
- 1 teaspoon vanilla
- 6 tablespoon vegetable oil
- 1 cup water
Instructions
- Preheat oven to 400
- Grease an 8×8 cake pan
- In a bowl, combine flour, sugar cocoa powder, salt, and baking soda
- Stir in the vinegar, vanilla and oil.
- Add water and stir to combine
- Pour batter into the greased 8×8 cake pan
- Bake 26-30 minutes until toothpick inserted into the center of the cake comes out clean
- Let cake completely cool before frosting
I used “not too sweet chocolate icing” on the snack cake. I am a butter cream lover at heart but wanted to switch it up a bit. I find this icing more chocolaty and less sweet, if that makes sense. It recipe makes enough to cover the entire top and sides of the snack cake but I usually just use it on the top of the cake and then have some left over for other uses like frosting cookies. Plus it gives me an excuse to bake something that needs icing!

Not Too Sweet Chocolate Icing
Ingredients
- ⅓ cup salted butter, softened
- 2 ¼ cup icing sugar
- 6 tablespoon cocoa
- 1 teaspoon vanilla extract
- ⅔ cup heavy cream (or half & half or milk)
Instructions
- Beat the butter until fluffy.
- Add the icing sugar and cocoa slowly and continue to beat.
- Add the vanilla extract and then slowly add the heavy cream (or milk).
- Continue to beat until you reach the consistency you desire. (You may need to add more icing sugar if too thin or more heavy cream, if too thick. (Depending on how thick you want the icing)
