There are lots of versions of this recipe. The 3 ingredients are usually peanut butter, sugar and egg. This is basically your answer to cookie cravings when you don’t have time to whip up a full batch of traditional peanut butter cookies. Plus with just 3 ingredients, a bowl and a spoon, this is a simple recipe to make with kids or a good starter recipe for them to make on their own.
Jump to RecipeCan we talk about the sprinkles? I am a firm believer that sprinkles make everything better! Who can resist the fun colors and crunchy texture of sprinkles? I always throw a handful of sprinkles into these cookies to fancy them up and give them a little crunch. Consider adding sprinkle shamrocks for St. Patty’s Day or sprinkle hearts for Valentines Day. I have seen them done with mini chocolate chips or mini marshmallows as well. Really any mini sized mix in would work. They are really good plain as well!
Keep in mind that It is a small recipe so it only makes about 10-15 cookies (depending on the size of your cookies). With these it is all about quick, easy and delicious. Start to finish you will have fresh cookies in about 20 minutes. Perfect for an after school snack or after supper treat or even a midnight craving!

I am a big fan of freezing cookie dough into balls for a quick treat in the future. This recipe is kinda gooey to freeze and is so quick to make that I don’t freeze this dough.
But typically I make a few cookie balls from other batches of cookies and freeze them. Just form the dough into balls and space them out on a freezer friendly pan. Freeze for at least a hour and then take them out and store the frozen cookie balls in a ziplock bag in the freezer. To bake just pull them out of the freezer and preheat oven according to the original recipe. Place frozen dough balls on a cookie sheet, bake for an extra minute or two than the original recipe and you have fresh cookies in minutes with out all the mess of making a full batch of cookies from scratch.
If you are in need of some freshly baked cookies and you don’t have any cookie dough balls waiting for you in the freezer, this is your best bet for quick and delicious cookies!
