These ones are just so pretty. I love the way they crackle and then that sparkle of sugar too! Anything peanut butter and chocolate is always a hit here.

Peanut Butter Crackle Cookies
Ingredients
- 1 ⅓ cup flour
- 1 teaspoon baking soda
- ¼ teaspoon baking powder
- ½ teaspoon salt
- ½ cup butter, at room temperature
- 1 cup brown sugar
- ¾ cup smooth peanut butter
- 1 large egg
- 1 teaspoon vanilla extract
- ⅓ cup mini chocolate chips
- ⅓ cup granulated sugar
- ½ cup icing sugar
Instructions
- Preheat oven to 350 degrees.
- Combine the flour, baking soda and salt.
- Beat the butter, brown sugar and peanut butter on medium high until fluffy, about 3 minutes.
- Add the egg and vanilla and beat until combined.
- Add the flour mixture and beat on low until combined.
- Stir in the chocolate chips.
- Put the white sugar in a bowl and the icing sugar in a separate bowl.
- Roll tablespoons of the dough into balls. Rolls the balls in the white sugar first and then the icing sugar.
- Place on a cookie sheets and bake for 15-18 minutes, until the edges begin to golden.
- Cool slightly and move to cooling racks.
