This is a small batch recipe but can be easily doubled for a crowd. I like to freeze a couple of the dough balls to have them on hand for a chocolate emergency!
I normally bake my cookies on parchment paper but like to bake these cookies on foil for crispy edges and a gooey middle.

What kind of chocolate do you use?
I like to combine both chocolate chips and chunks of cut up chocolate. Reserve a bit of chocolate or use more chocolate to add to the top of the cookie dough ball. You can also add some chocolate just before taking the cookies out of the oven.
What are Skor bits?
Skor bits are little bits of toffee. In some places they are also called Heath bits. If you can’t find the little bits you can always crush up a Skor chocolate bar.
How do you get the ripples around the outside of the cookie?
If you want very pronounced ripples around your cookies you can remove the pan from the oven when they begin to rise (at about 8 minutes) and lift and drop the edge of the pan to make the cookies drop. Put the of cookies back in the oven and continue same process each time they rise.

Small Batch Chocolate Chip Toffee Cookies (Nine Cookies)
Ingredients
- ¼ cup butter, softened
- 2 tablespoon sugar
- ¼ cup brown sugar
- 1 large egg
- ¼ teaspoon vanilla extract
- ¼ teaspoon baking soda
- ½ cup flour
- ½ cup chocolate chips, chunks
- ¼ cup chocolate chunks
- ¼ cup Skor toffee bits
- sea salt, for sprinkling
Instructions
- Preheat oven to 350 degrees. Line a baking sheet with foil.
- Stir together slightly softened butter, sugar, brown sugar together.
- Add egg and vanilla extract. Stir until well combined.
- Add in baking soda and flour. Continue to stir until well combined.
- Fold in chocolate chips, chocolate chunks and toffee bits.
- Use a cookie scoop and place on the prepared baking sheet.
- Bake for 10-12 minutes until golden brown.
- Remove from oven and sprinkle with sea salt.
- Let sit for 2 minutes and then remove to a cooling rack.

Thanks for catching that! I have updated the recipe to include sprinkling the cookies with sea salt after removing them from the oven. I like to sprinkle in a puddle of melted chocolate to get that sweet and salty mix.
