Small Batch Chocolate Chip Toffee Cookies

December 2, 2021 by Rhonda Huston

    Jump to Recipe Print Recipe

This small batch recipe makes 9 good sized cookies. The dough to chocolate ratio is all up to you! I like to stuff these cookies full of chocolate chips, chocolate chunks, skor toffee bits and then top them off with a sprinkle of sea salt to bring out the chocolatey richness. If you like a crispy edge and gooey middle this is the cookie recipe for you!

Why you will love this recipe

    • No mixer required.
    • It only uses one bowl. Less mess is a bonus!
    • It is a quick, small batch recipe perfect for a weeknight treat!

    Ingredients you will need

    • Butter
    • Brown Sugar
    • White Sugar
    • Egg
    • Vanilla Extract
    • Flour
    • Baking Soda
    • Chocolate Chips
    • Chocolate Chunks
    • Toffee Bits (Skor Peices)
    • Sea Salt

    Tips for making this recipe

This is a small batch recipe but can be easily doubled for a crowd. I like to freeze a couple of the dough balls to have them on hand for a chocolate emergency!

I normally bake my cookies on parchment paper but like to bake these cookies on foil for crispy edges and a gooey middle.

    Frequently Asked Questions

What kind of chocolate do you use?

I like to combine both chocolate chips and chunks of cut up chocolate. Reserve a bit of chocolate or use more chocolate to add to the top of the cookie dough ball. You can also add some chocolate just before taking the cookies out of the oven.

    What are Skor bits?

Skor bits are little bits of toffee. In some places they are also called Heath bits. If you can’t find the little bits you can always crush up a Skor chocolate bar.

How do you get the ripples around the outside of the cookie?

If you want very pronounced ripples around your cookies you can remove the pan from the oven when they begin to rise (at about 8 minutes) and lift and drop the edge of the pan to make the cookies drop. Put the of cookies back in the oven and continue same process each time they rise.

Very excited to try these! I see sea salt in the first list of ingredients but I don’t see that in the second list or when to add. Please kept me know.

Thanks for catching that! I have updated the recipe to include sprinkling the cookies with sea salt after removing them from the oven. I like to sprinkle in a puddle of melted chocolate to get that sweet and salty mix.
