When you can’t have a fire but are in need of some s’mores this recipe has you covered! Basic sugar cookie on the bottom with chocolate and marshmallow on top. Give it a one minute broil and you have a golden marshmallow that looks like it came straight from a campfire!

S’mores Cookies
Ingredients
- 1 cup flour
- ½ teaspoon baking soda
- ¾ teaspoon cornstarch
- ¼ teaspoon salt
- ½ cup melted butter
- ½ cup brown sugar
- ¼ cup white sugar
- 1 egg
- 1 teaspoon vanilla extract
- 10 mini chocolate bars
- 10 marshmallows
Instructions
- Preheat the oven to 325 degrees. Line baking sheet with parchment paper.
- Combine the flour, baking soda, cornstarch and salt (omit salt if using salted butter).
- In a separate bowl, whisk together the melted butter, brown sugar and white sugar.
- Mix in the egg and vanilla.
- Mix in dry ingredients.
- Use a cookie scoop or form into balls and place on the prepared baking sheet.
- Bake for 8 minutes.
- Remove from the oven and place chocolate and then marshmallow on top of the cookies.
- Return to the oven for 2 minutes and then broil for a minute to toast the marshmallow.
- Cool for a few minutes on baking sheet and then move to a wire rack to cool.
