Peanut Butter Crackle Cookies

Ingredients
  

  • 1 ⅓ cup flour
  • 1 teaspoon baking soda
  • ¼ teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup butter, at room temperature
  • 1 cup brown sugar
  • ¾ cup smooth peanut butter
  • 1 large egg
  • 1 teaspoon vanilla extract
  • cup mini chocolate chips
  • cup granulated sugar
  • ½ cup icing sugar

Instructions
 

  • Preheat oven to 350 degrees.
  • Combine the flour, baking soda and salt.
  • Beat the butter, brown sugar and peanut butter on medium high until fluffy, about 3 minutes.
  • Add the egg and vanilla and beat until combined.
  • Add the flour mixture and beat on low until combined.
  • Stir in the chocolate chips.
  • Put the white sugar in a bowl and the icing sugar in a separate bowl.
  • Roll tablespoons of the dough into balls. Rolls the balls in the white sugar first and then the icing sugar.
  • Place on a cookie sheets and bake for 15-18 minutes, until the edges begin to golden.
  • Cool slightly and move to cooling racks.
