Preheat oven to 350 degrees.
Combine the flour, baking soda and salt.
Beat the butter, brown sugar and peanut butter on medium high until fluffy, about 3 minutes.
Add the egg and vanilla and beat until combined.
Add the flour mixture and beat on low until combined.
Stir in the chocolate chips.
Put the white sugar in a bowl and the icing sugar in a separate bowl.
Roll tablespoons of the dough into balls. Rolls the balls in the white sugar first and then the icing sugar.
Place on a cookie sheets and bake for 15-18 minutes, until the edges begin to golden.
Cool slightly and move to cooling racks.
