This one is from thesweetandsimplekitchen.com and they are so good. Plus anything with sprinkles just makes people happy 🙂 They have a beautiful crackle top and are nice and chewy in the middle. The perfect cookie combination, plus sprinkles 😉
The recipe makes 12 giant cookies but I went with 20 regular cookies so I could spread that sprinkle joy a little further!

Birthday Cake Sugar Cookies
Recipe from The Sweet and Simple KitchenMakes 12 giant cookies or 20 regular sized cookies.
Ingredients
- ¾ cup butter, softened
- 1 cup sugar
- 1 large egg
- 2 teaspoon vanilla extract
- 1 ¾ cup all purpose flour
- ¾ teaspoon baking soda
- ¼ teaspoon salt
- ¼ cup multi color sprinkles
Instructions
- Preheat oven to 350. Line baking sheets with parchment paper.
- In a stand mixer with the paddle attachment, cream together butter and sugar until fluffy (about 7 minutes). Scrape down sides of bowl and add egg and vanilla. Beat until fluffy.
- Whisk together flour, baking soda & salt. Add to wet ingredients, beating on low until the batter just starts to come together. Add sprinkles and beat on low to combine.
- Using a cookie scoop, drop batter onto prepared baking sheets.
- Bake 11-13 minutes or until tops begin to crackle & edges are a light golden color.
- Remove from pan and place on a cooling rack.
