Preheat oven to 350. Line baking sheets with parchment paper.
In a stand mixer with the paddle attachment, cream together butter and sugar until fluffy (about 7 minutes). Scrape down sides of bowl and add egg and vanilla. Beat until fluffy.
Whisk together flour, baking soda & salt. Add to wet ingredients, beating on low until the batter just starts to come together. Add sprinkles and beat on low to combine.
Using a cookie scoop, drop batter onto prepared baking sheets.
Bake 11-13 minutes or until tops begin to crackle & edges are a light golden color.
Remove from pan and place on a cooling rack.
