Birthday Cake Sugar Cookies

Recipe from The Sweet and Simple Kitchen
Makes 12 giant cookies or 20 regular sized cookies.

Ingredients
  

  • ¾ cup butter, softened
  • 1 cup sugar
  • 1 large egg
  • 2 teaspoon vanilla extract
  • 1 ¾ cup all purpose flour
  • ¾ teaspoon baking soda
  • ¼ teaspoon salt
  • ¼ cup multi color sprinkles

Instructions
 

  • Preheat oven to 350. Line baking sheets with parchment paper.
  • In a stand mixer with the paddle attachment, cream together butter and sugar until fluffy (about 7 minutes). Scrape down sides of bowl and add egg and vanilla. Beat until fluffy.
  • Whisk together flour, baking soda & salt. Add to wet ingredients, beating on low until the batter just starts to come together.  Add sprinkles and beat on low to combine.
  • Using a cookie scoop, drop batter onto prepared baking sheets.
  • Bake 11-13 minutes or until tops begin to crackle & edges are a light golden color. 
  • Remove from pan and place on a cooling rack.
